A full bodied creamy bloomy rind cheese bound in spruce giving it undertones of pine. Vacherin is made between August and March and normally available up to May. The seasonal variation in the milk fats leads the Jura cheesemakers to make Comte in the summer months and Vacherin in the cooler ones. Can be baked to create a exceptional starter.

    Oh my! We had a memorable supper last night: baked Mont D’or drizzled over potatoes, other veg and random leftover’s from the fridge, mopped up with chunks of bread. One of the most delicious meals I can remember!
