Tomme is a name given to a family of mild semi-hard cows milk cheeses produced in the French and Swiss Alps. Our Tomme de Savoie is traditionally made from unpasteurised, skimmed cow’s milk after the cream has been drained off to make butter. As a result, it tends to be lower in fat content, about 20-40%. The cheeses are typically matured for around 2-4 months during which it develops this distinctive thick, grey/brown rind that is perfectly edible and gives a lovely earthy, mushroomy flavour to the cheese which complement the tangy, slightly citrus notes from the smooth, pliable interior.
