Rachel is a modern, British, unpasteurised goats’ milk cheese, made by Pete Humphries at White Lake Farm in Somerset. Unusually for a Goats cheese, it is semi-hard and has a lightly washed rind. This cheese id famously named after a lady with whom he was romantically attached. Unfortunately, things didn’t work out, but on the upside, he was left with a fantastic cheese that rapidly began to win awards – the name therefore stuck. It has a beautiful lingering subtle, nutty flavour that is both delicate and rich.
