Perl Las, meaning ‘Blue Pearl’, is a creamy, pungent blue cows milk cheese made by Carwyn Adams of Caw Cenarth in West Wales. The cheese grows quickly in maturity once cut becoming golden in colour and saltier in taste. Think halfway between Stilton and Roquefort. Eats extremely well with honey or pear.
