This beautifully strong and firm cheese is made at Lyburn Cheeses in the New Forest and is also sometimes known as ‘Old Smales’. Although it is made to a Gouda recipe, as it ages this cheese takes on an almost Parmesan like texture, becoming pleasingly crystalline and crumbly whilst also developing a cheddar style twang that west countryman would be proud of. Substitute for your usual cheddar or Parmesan – you won’t be disappointed.
