This distinctive and award winning hard ewes’ milk cheese is made by the Fletcher family at Ram Hall farm near Berkswell, outside Solihull. Originally made using a recipe for Caerphilly, Berkswell developed a somewhat different character, and is now more akin to a British version of a Manchego.
Younger cheeses possess a sweet creaminess, but after five or so months maturing the cheeses become denser and crumblier in texture and the flavours grow in intensity.
